High Protein Pancakes

Eating balanced does not have to be boring 🤩

Love pancakes but don’t love food coma aftermath?

These high-protein pancakes will keep you satiated all morning without throwing your blood sugar out of whack 🙌

Ingredients:

  • 1 cup (227g) Low Fat Greek Yogurt
  • 3 1/2 TBSP all purpose flour
  • 1 tsp vanilla stevia
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp cinnamon
  • 2 eggs (yolks removed)
  • 1/4 tsp vanilla extract

Makes 2 Servings

🍗 Protein: 15.4g

🍞 Carbs: 15g

🥑 Fat: 2.8g

Instructions:

1️⃣Preheat a skillet over medium low heat.

2️⃣Stir the yogurt well and pour into a medium sized bowl. Add in the flour, stevia, baking soda, cinnamon and salt. Stir until just combined.

3️⃣In a smaller bowl whisk together the egg whites and vanilla extract.

4️⃣Pour the egg mixture into the yogurt-flour mixture and stir until just combined.

5️⃣Spray the skillet with cooking spray. I like to use coconut oil spray.

6️⃣Pour 2 tbsp of batter at a time onto the skillet. When bubbles begin to appear on the top of the pancake, flip it over and cook for another minute.

7️⃣Top with a sugar free syrup if desired, and you are in breakfast heaven!
